Katie Couric's Lemon Chicken (Emlyn)

4 boneless,skinless chicken breasts
3 tbsp flour
3 tbsp butter
2 tbsp olive oil
1 3/4 c. chicken broth
1/4 c. fresh lemon juice
salt & pepper
Cooked basmati Rice

Pound breasts to 1/2" thick (I didn't). Dredge in flour with salt and pepper mixed in. Saute' in oils until done. Remove. Stir flour into drippings. Add broth and lemon juice. Cook to thicken. Return chicken to pan to heat through. Serve over rice.

I don't like all the oils so next time I'm going to try 1 1/2 tbsp cornstarch dissolved in 1/4 cup broth to thicken it. I'll just brown it in a bit of olive oil. But it was good. One good sized lemon should give enough juice.
