Mandarin Orange Cake (Shalene)

Cake:
2 cup all-purpose flour
2 cup white sugar
2 teaspoon baking soda
1 teaspoon salt
2 egg
2 teaspoon vanilla extract
4 cups boiled and cooled mandarin oranges
(or 3 - 11oz cans mandarin oranges drained)

Topping
1 ½ cup brown sugar
6 tablespoons milk
6 tablespoons butter
1 ½ cup flaked coconut
1 cup chopped walnuts

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 x 11 cake pan.
2. Cook mandarin oranges for about 5 minutes, drain and let cool.
3. In a large bowl, mix the flour, sugar, baking soda and salt. Make a well in the center and add the egg, vanilla, mandarin oranges.
4. Pour batter into cake pan. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the cake comes out clean.
5. While the cake is baking, prepare the sauce. In a medium saucepan, combine brown sugar, milk and butter. Bring to a boil and stir in coconut and walnuts. While still hot, pour over cake as soon as it comes out of the oven.
