Panera's Sierra Turkey Sandwich (Emlyn)

Making this famous restaurant sandwich is easy (and much cheaper!). This recipe makes enough to feed a large party.


Ingredients
2 1/2 C. heavy mayonnaise
2 Tbs. sugar
1/3 C. pureed chipotle in adobo sauce
3 medium limes, juiced
20 wedges Asiago cheese focaccia, split
5 lb. smoked turkey breast, sliced thin
2 large sweet onions, sliced very thin
1 lb. field greens, washed, dried and chilled

Directions
Blend mayonnaise, sugar, pureed chipotle and lime juice together in a medium bowl. Cover and place in refrigerator for at least 30 minutes before serving.

For Each Serving: On bottom piece of split foccacia, spread 2 Tbs. of chipotle mayonnaise. Top with 4 oz. turkey and 1 slice onion. Lightly cover with greens. Replace top of foccacia.

Yield: 20 sandwiches

Super Yummy BBQ Chicken Sandwiches (Emlyn)

boneless, skinless chicken breasts
1 1/2 cups tomato ketchup
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon cider vinegar
1 teaspoon ground red hot pepper flakes, or to taste
1/2 teaspoon garlic powder

Throw everything in a crock pot and cook on low for 3-4 hours or highfor 2-3 hours. Shred the chicken with a fork and let it simmer in thecrock pot for another 15 mins. Serve warm on hamburger buns for agreat sandwich that is sure to please anyone.

Chicken N Biscuit (Ronnett)

Ingredients:
8 oz. cream cheese
8 oz. sour cream
2 cups of shredded chicken
2 pkg of 8 cresant rolls
Italian Seasoning
Garlic Salt
Onera Seasoning (meat seasoning find by the meat department) Basil Parsley Flakes Your favorite seasonings

Directions:
Boil chicken and shred (I usually just pull apart using two forks). Mix sour cream and cream cheese. Add chicken and mix well. Add seasonings to taste. You can use any seasonings you like. I listed the ones I use, but you can use anything. Mix well. Put spoonful of mix into center of crescent roll and wrap roll around. Bake this at whatever the crescent roll requires. This makes approximately 16 servings.
